Summer Tomato Parsley Salad

Ingredients:

  • 1 lb. Cherry Tomatoes, halved

  • 1 large Cucumber, cubed

  • 1 medium organic Green Apple, diced

  • 1/4 cup Red Onion, diced

  • 1 Clove Garlic, minced

  • 1/3 cup fresh Parsley, chopped

  • 1 tbsp. Hemp Seeds

  • 1/4 cup Extra Virgin Olive Oil

  • Juice of 1 Lemon

  • Pink Salt & Pepper to taste

  • Mint Leaves for garnish

Directions:

In large mixing bowl, combine all yummy ingredients. Toss well to coat all veggies in the olive oil and lemon juice. Garnish with mint.
