Hardy Rice Garbanzo & Herb Soup With Vegan Cheese
Ingredients: (Try All Organic)
1 Yellow Onion, Diced
3-4 Cloves Garlic, Minced
3 Stalks of Celery, Diced
4 Large Carrots, Diced
¼ Cup Fresh Parsley, Chopped
¼ Cup Fresh Basil, Chopped
1 Tbsp. Turmeric
1 tsp. Thyme
1 tsp. Oregano
1 tsp. Coriander
Dash of Cayenne Pepper
1 Can of Coconut Milk
64 oz. Boxed Vegetable Broth or Homemade
1 ½ Cup of Brown or Wild Rice
1 Cup Dried Garbanzo Beans (Soaked Overnight) or 1 Can Eden Organic, Drained & Rinsed
Himalayan Salt & Pepper, To Taste
Splash Fresh Lemon Juice, If Desired
Instructions:
Sauté onion & garlic in oil for 3-4 minutes. Cook the celery & carrots next for 3-4 minutes then add beans & seasonings to cook for 5 minutes in 4 cups of broth to simmer. Cook for 10 minutes, then add 2-3 more cups of broth, rice, & coconut milk. Add splash of lemon juice. Cook until rice is done, top with plant-based cheese, & enjoy!
